Copycat Kodiak Protein Minute Muffins (Chocolate Peanut Butter)


As of recently there's a craze of microwave protein muffins, whether it be Kodiak Minute Muffins or FlapJacked Mighty Muffins--and of course I've tried both. They're easy to pop in the microwave and you only have to add water. The downside? They're pretty pricey, at least $3 each.

So I decided that I would set out to make my own version. Coming in at 27 grams of protein (more than either of the other brands), 346 calories, and 39 grams of carbs, they are the perfect filling breakfast before a long day--or even a plentiful afternoon snack.

This recipe can also be made in bulk! Store a bunch of the dry ingredients in a container or bag, scoop 3/4 cups into a mug, add your wet ingredients, microwave, and enjoy!

Copycat Kodiak Protein Minute Muffins (Chocolate Peanut Butter)

Makes 1 Muffin | Time: 5 Minutes

Ingredients

  • 1 scoop vanilla protein powder (or choice flavor)
  • 2 Tbsp almond flour
  • 1 Tbsp cocoa powder
  • 2 tsp coconut sugar
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1 Tbsp chocolate and peanut butter chips 
  • 2 Tbsp egg whites
  • 1/4  cup water
Place all your dry ingredients in a medium or large sized mug. Add in egg whites and water. Whisk until all combined. Cook in the microwave for 2 minutes. Enjoy!

  1. Hi, have you tried making this with egg white powder and then increasing the amount of water? Egg whites are easy enough, but thought if it worked with powder, it could be made in bulk with just adding water.
